Creme Brulee & Favorite Casserole

The other night Mitch's dad called to see if he could bring over some homemade creme brulee - complete with the torched sugar topping - who in their right mind would say no to that??!  Not us!  Pop came over, plumbing blowtorch in hand, and fired up some amazing desserts for each of us.  They were so good, at least as good if not better than restaurant quality, and the boys finished theirs off pretty quickly too!  Thanks Pop!  Feel free to come over anytime with trial recipes!

This is totally unrelated to the creme brulee, but I recently fed about 20 people while our relatives were in town over Christmas.  I promised some of them I would post the recipe because it got very good reviews and easily feeds a huge crowd!  It's actually from a lady from our former church in Allentown and is a family favorite of ours as well!

Favorite Casserole
4 c. cooked rice
4 c. cubed ham (or smoked turkey)
3 c. shredded cheddar cheese
2 cans cr. mushroom soup
1 small onion - chopped
12 oz. can evaporated milk (reg. milk works too)
20 oz. frozen chopped broccoli

Topping: 
2 c. crushed cornflakes
1/2 c. melted butter

Cook broccoli with onions (in microwave or stove).  Mix all other ingredients.  Place in very large casserole dish.  Mix butter and cornflakes; spread over the top.  Bake at 350 for 1 hour lightly covered with tin foil.   Serves 10-12 (I doubled it for our family gathering).
