German Pancake


My friend Lisa has a great blog and often posts recipes that she and her family enjoy. I love reading her recipes and getting new ideas for meals because I often feel like we are eating the same things over and over! Last night I saw a recipe for a German pancake with berries in my Parents magazine and thought it looked fun to try. I made it this morning and it was a huge hit with all 4 of us, so I thought I would share it with anyone who wants some creative breakfast ideas. The pancake is really light, almost like a crepe, and so it is not too filling and since it is topped with tons of fresh fruit, I count it as a pretty healthy and really good start to the day! Enjoy!

German Pancake with Berries
2 Tbs. butter
2 eggs
1/2 c. flour
1/2 c. milk
1 Tbs. white sugar
1 tsp. vanilla
1/4 tsp. salt
3 c. fresh berries
2 Tbs. powdered sugar

Heat oven to 400. Place butter in 10 inch ovenproof skillet and melt in oven. Whisk eggs in a bowl and add flour, milk, white sugar, vanilla, and salt; whisk until smooth. Immediately pour batter into hot skillet and bake 20-25 min, until puffed and browned. Remove from oven. The pancake will fall in the center as it cools. Top with berries and powdered sugar and serve immediately. Makes 6 (I would say 3 or 4) servings.

If you do try making this, remember that the pan is coming out of the oven and it is HOT...Mitch had a little incident at breakfast and wanted to make sure no one else got a stinging blister too!
