Molten Cakes

I think that all the recipes I ever post are desserts...can you tell what I love?! Anyway this recipe is for those chocolate cakes that have the warm gooey middle and are out of this world delicious. I made them tonight for a dinner at my parents' house with some of their neighbors and instead of emailing the recipe to just them, I figured I would post it here for anyone else that might be interested. I had seen this recipe but didn't make it for years because I didn't have those special souffle cups that the recipe suggests using. However, my friend Kristen recently enlightened me to the fact that you can just as easily make these in muffin tins and so now I'm addicted...just try them....you will be too!

Baker's Molten Chocolate Cakes
4 squares semi-sweet baking chocolate
1/2 c. butter
1 c. powdered sugar
2 eggs
2 egg yolks
6 Tbsp. flour

Preheat oven to 425. Butter (not Pam, use a good amount of butter so they don't stick) 4 souffle cups (or 8-10 muffin cups).
Microwave chocolate and butter in large bolw until butter is melted. Stir with wire whisk until chocolate is completely melted and then stir in sugar.
Whisk in eggs and egg yolks. Stir in flour. Pour batter into prepared tins or cups.
Bake 13-14 min (10-11 if using muffing tins) until sides are firm but centers are soft. Let stand at least 1 min.
Carefully run knife around outside of cakes to loosen and invert onto dessert dishes or serving plate. Serve immediately, best with icecream, and prepare to impress!

*you can also use unsweetened baking squares and just add 1 c. sugar
**you can make this up to the day before and just store the batter in the muffin tins in your fridge and bake when you're ready...so easy and then you have a hot dessert to wow your guests with:)

I'm so excited! I have always wanted to try these too, but didn't want to buy the souffle cups. I'm so glad that you have opened my eyes to a new dessert that I can make. Although, maybe after I lose the baby weight first? Ah, or maybe now! :) Thanks for sharing!
