Although today was a pretty gray and rainy day in our neck of the woods, the boys had plenty to keep them busy and even tired out by making an indoor playground complete with a slide! We (I) also had a full morning making 50 whoopie pies for my parents' church's MYF auction at Pennview on Saturday night. The recipe (below) is actually from their church cookbook, Blooming Glen Mennonite, so it's very fitting!
Caleb going up the step and Noah going down the slide...

I asked them to say "hi" to me so I could take their picture and if you look closely, they are both yelling "hi" to the mixing bowl:)

Yummy!
Here is the recipe for the whoopie pies:
Marble Whoopie Pies
Chocolate:
1 c. cocoa
4 1/2 c. flour
2 c. sugar
1 c. shortening
2 tsp. baking soda
2 tsp. salt
2 tsp. vanilla
2 egg yolks
1 c. sour milk
1 c. hot water
___________
Vanilla:
2 c. sugar
3/4 c. butter
4 c. flour
2 eggs
2 tsp. baking soda
1 c. buttermilk
pinch salt
____________
Mix chocolate and white batters seperately. Drop small amounts of each on cookie sheet and use toothpick to swirl (or just keep seperate to make vanilla and chocolate pies like I did). Bake at 400 for about 10 min.
____________
Filling:
2 egg whites, stiffly beaten
2 tsp. vanilla
4 T. milk
4 c. 10x sugar
1 1/2 c. shortening
____________
Beat egg whites. Add remaining ingredients and spread on cookies to make sandwiches. I also added cocoa to half of the filling to make chocolate filling for some of them.
***This recipe makes 50-60 whoopie pies (100-120 halves),depending how big you make them, so you can easily 1/2 it if you don't want so many!
