Hot & Cold


Summers generally are filled with super hot days, and although we haven't been hit with too many above 90 degree days (yet), summer is summer and it is still hot! And when it is hot...what's better than trying to cool off by eating something really cold...like ice cream! So here are a few random pictures from our hot and cold summer, as well as my Aunt Jane's ice cream cake recipe that several of you have asked about(from Noah's birthday party)!

Ice Cream Sandwich Dessert

19 ice cream sandwiches (I used a bigger dish and used more like 26)
1 (12 oz) cool whip, thawed
1 jar (11 3/4oz) hot fudge topping
1 c. peanuts (I obviously left this out since Caleb is allergic)

Line ice cream sandwiches in bottom of 13x9 pan so there is one even layer (you may need to cut some). Spread with fudge, half of whipped topping, and 1/2 c. peanuts. Repeat layer with remaining sandwiches, whipped topping and peanuts. Cover and freeze (up to 2 months). Remove from freezer 20 min. before serving.

I also added crushed oreos and pretzels to the top of mine to make it look like a road:)
